Smoked Ham Hock
1.5 - 2lbs each. These are generously cut to include more meat. Brined with Himalayan salt and freshly ground organic herbs and spices, and cold-smoked over unsprayed applewood, these hocks are like little self-basting mini-hams. Don't underestimate the potential for flavor and the rich pork jus that will come running out. We like to do a slow braise with apples and onions in a covered roasting pan or crockpot until they are fall-apart tender. We recommend roasting two at a time. Start a fabulous bone broth with the skin and bone after picking these hocks clean. The smoky flavor is a real treat, and the gelatin from the skin and connective tissue makes a superb soup base.
Our hogs are from Berkshire sows that are bred to our 1/2 Mangalitsa and 1/2 Red Wattle boar. Our hogs are untainted, unmedicated, and unvaccinated. They are robust and vibrantly healthy foraging on our land, and eating non-gmo, corn-free, soy-free, custom milled grains that are fermented in our raw jersey milk.
