Cottage Cheese (smetana/tvorog style)

The creamy part of our cottage cheese is our cultured cream (smetana), skimmed from the top of milk that is set aside warm from the cows and cultured at room temperature. The clabber under the cream is then heated to 122 degrees and the resulting curd is dripped to form the curd (tvorog) that is included in this Ukrainian style cottage cheese. We deliver them in a container with the cream on top and the curds below, so you stir it to mix them together prior to serving.
